BLOODY TOMATO SOUP WITH OLIVE OIL FOR HALLOWEEN

As Halloween approaches, spooky mysteries await around each corner. While most people focus on having the spookiest lawn decorations or costumes, my family is all about the food!

This year, I’m going with a wholesome soup that’ll scare the socks off of everyone! Gorge yourself with some deliciously bloody tomato soup with olive oil.

Although gory in looks, this sweet and savory soup embodies healthy ingredients to fill up the soul. So, gather your veggies, put on your witch’s hat and set the cauldron! This homemade recipe will have your family begging for more.

Instructions

First, moisten the sun dried tomatoes by covering them with hot boiled water and soak them for 30 minutes before straining them. Then preheat 2 tablespoons of olive oil in a large pot and add the vegetables: onions, garlic, mushrooms, peppers and half of the sun dried tomatoes. Stir for about 3 minutes before adding the fresh tomatoes, 1/2 cup of water, vinegar, wine, half of basil leaves, and salt and pepper. Let it all simmer for 40 minutes. Turn it off, then put the mixture in a blender with 2 tablespoons of olive oil.


Ingredients

  • 500 grams of fresh tomatoes, chopped in cubes

  • 150 grams sun dried tomatoes, moistened

  • 2 garlic cloves

  • 50 grams of sliced onion

  • 150 grams of mushrooms

  • 1 glass of white dry wine

  • 3 tablespoon vinegar

  • salt and pepper

  • chopped basil leaves

  • 1 teaspoon sugar

  • 1/2 teaspoon sweet paprika

  • 1 spicy pepper(optional)

  • 250 grams of Greek yogurt

  • 60 ml olive oil


This soup can be served hot or cold, in a soup bowl or in a glass. Chop the rest of sun dried tomatoes and use a whisk to mix the yogurt, the rest of basil and olive oil when you’re ready to serve. You can also add bread sticks on the side to add the effect of 'fingers dipped in blood'.
