CHOCOLATE CHIP EVOO MUFFINS

Did you know October 14th is National Dessert Day? It’s a holiday to celebrate the sweets things in life - like dessert!!! Indulge your sweet tooth with our irresistible homemade muffins. These chocolate chip EVOO muffins are simple to make and wonderfully moist, it’ll fool anyone into thinking you were slaving all day in the kitchen to bake these. Truth is, they don’t have to wait long as this muffin recipe is ready in only 10 minutes!

There’s nothing more welcoming than the smell of fresh baked cookies permeating thru the home. They ought to bottle that scent up already!!! Any homemade recipe is healthier because you’re making it fresh and controlling your own ingredients. Plus, you know what’s actually going into your food and body.

So this leads to why I chose to use extra virgin olive oil instead of butter or margarine in this recipe. Using extra virgin olive oil to bake is an healthier alternative and the secret to these perfectly moist chocolate chip EVOO muffins.

To keep it even healthier, I opted to use whole wheat flour instead of all-purpose flour. I also added a few pieces of dark chocolate for it’s antioxidant properties. Lastly, I substituted regular milk with almond milk to give it a slight aromatic flavor. Don’t worry! It is not going to make your muffins taste awesome!

In short, it's a super-muffin.

Unlike any other muffin recipe, it combines the magic of chocolate with the healthy benefits of extra virgin olive oil. Perfectly healthy without the bland taste! 

Chocolate Chip EVOO Muffin Recipe

Ingredients

·    3 Large Eggs

·    100 grams Plain Greek Yogurt

·    150 ml. Almond Milk

·    100 ml. Greek Extra Virgin Olive Oil

·    1 tsp. Vanilla Extract

·    200 grams of Unrefined Cane Sugar

·    200 grams Whole Wheat Flour

·    80 grams Unsweetened Cocoa

·    2 tsp. Baking Powder

·    150 grams Dark Chocolate Chips

·    Pinch of Salt

Instructions

First, preheat the oven to 375° Fahrenheit and while waiting for the oven take out 2 cupcake trays and arrange the cupcake liners into each opening. Yes, cupcakes and muffins can share the same equipment! They are basically the same, for the exception of ingredients.

Next, use a large mixing bowl to combine all the dry ingredients together and whisk. In a separate medium mixing bowl, combine all the wet ingredients and whisk until completely blended. Then, slowly add the wet mixture into the dry bowl and mix until batter consistency thickens.

Then pour the batter into each cupcake liner and fill only ¾ of the way. Put the muffins into the oven and bake for 15-25 minutes. Keep in mind that baking time mainly depends on the size of the cupcake tray you are using. An easy way to check if they are done is by inserting a toothpick in the center of the muffins and see if it comes out clean. Once it’s out of the oven, let it cool down for about 15 minutes and enjoy!
